This was inspired by a post My friend Tammy sent me on facebook from Harvest Moon Market. I made it last week but saved it for today’s Z post. This is super easy – and the kids loved it too. I am looking forward to the summer squash to do this again!
Ingredients
- 3 Zucchinis
- olive oil
- 2 cloves garlic minced
- salt and pepper to taste
- 1 thinly sliced tomato
- Freshly grated cheese ( I used Mozzeralla, Asiago and Parmesan)
- Chopped Basil
- Panko Bread Crumbs

I’ll have to make this as soon as zucchini begins showing up in our CSA delivery. It looks simple to put together and I love the colors and the combination of cheeses you used.
It was so easy! I think i will fet some yellow and green squash this wknd and make it with some cous cous.
