Zucchini Tomato Cheese Basil Sticks

This was inspired by a post My friend Tammy sent me on facebook from Harvest Moon Market.  I made it last week but saved it for today’s Z post. This is super easy – and the kids loved it too. I am looking forward to the summer squash to do this again!


  • 3 ZucchinisZucchini Tomato Cheese Basil Sticks
  • olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 1 thinly sliced tomato  
  • Freshly grated cheese ( I used Mozzeralla, Asiago and Parmesan)
  • Chopped Basil
  • Panko Bread Crumbs

How to

  1. Preheat oven to 375
  2. Zucchini Tomato Cheese Basil SticksSlice the zucchini in half.
  3. Slice off the bottom to keep in stable.
  4. Brush with olive oil and top with garlic, salt and pepper to taste.
  5. Sprinkle with Panko bread crumbs.
  6. Add with sliced tomatoes.
  7. Top with grated cheese
  8. Bake 375 for 20 to 30 minutes until softZucchini Tomato Cheese Basil Sticks
