Every time I hear the words “Pecan Pie” I can’t help but think of the scene in the 1989 movie, “When Harry Met Sally” when Harry and Sally are inside the museum and Harry is talking to Sally
- Harry: Repeat after me. Pepper
- Sally: Pepper.
- Harry: Pepper.
- Sally: Pepper.
- Harry: Waiter, there is too much pepper on my paprikash.
- Sally: Waiter, there is too much pepper on my paprikash.
- Harry: But I would be proud to partake of your pecan pie.
- Sally: Oh…no.
- Harry: But I would be proud.
- Sally: But I would be proud.
- Harry: To partake.
- Sally: To partake.
- Harry: Of your pecan, pieeee….
- Sally: Of your pecan, pieeee….
- Harry: Pecan pieeee….
- Sally: Pecan pieeee….

I don’t know why I think of that… it just makes me laugh I guess. But I am digressing….. back to pecan pie. My mother’s friend Joyce makes these irresistible mini pecan pies. They are a family recipe – and she was kind enough to share it. They are perfect because they are not too sweet (unlike a slice of pecan pie which is sticky and very sweet) and just one or two really satisfies. Ideal for a cookie swap, afternoon tea or dessert.
Thanks to my mom we had an entire batch of these for labor day weekend
Crust Ingredients
- 8 oz package of cream cheese softened
- 1 cup butter softened
- 2 cups flour
Directions for Crust:
- Blend ingredients together by hand.
- Shape into 48 balls
- Push each ball into a mini decorative muffin pan like my mom does (12-Cup Muffin Pan Shell, Non-Stick) or do as Joyce does and use a Nonstick Mini Madeleine Pan.
Filling Ingredients
- 2 eggs
- 1 1/2 cups of light brown sugar
- 2 Tablespoons melted butter
- 1 Tablespoon vanilla
- Dash of Salt
- 2 cups pecans broken into pieces
Directions for Filling
- Beat eggs at low speed
- Add sugar, butter, vanilla and salt and mix at low speed
Assemble And Bake
- Place nuts into each crust
- Spoon a small amount of filling over nuts
- Bake at 350 degrees for 25 to 30 minutes until crust is lightly browned
- Remove from oven and let cool before moving the pies to a cooling rack

They are sooo easy! My mom and my daughter made them. What is great is you really dont need any electric tools. You can do it all by hand!
