What is soft.. melt in your mouth.. and gooey? Peanut Butter Chocolate Chip Truffle Cookies! Yes I know… I don’t like to bake.. so why am I posting another baked item? Because these are SOOO GOOD and SOOO easy. I have made these so many times that I can eyeball almost everything – so I dont need to measure. 😎 They are so easy that I even will bake a fresh batch for a special occassion before I leave for work in the morning (heck I dont even cook breakfast for my kids most mornings!)
These are so decadent you might think that there would be more than 5 ingredients, but these are as simple as you can get. No flour! Plus you can make this recipe vegan too!
Ingredients
- 1 cup Peanut butter – chunky is best. I have used both regular peanut butter and reduced fat. I wasn’t thrilled with the reduced fat version
- 1 cup frimly packed brown sugar
- 1 tsp baking soda
- 1 egg TO MAKE VEGAN use 1 1/2 teaspoons Ener-G Egg + 2 tablespoons water
- 3/4 cup chocolate chips: I always use a mix of bitter, milk and white TO MAKE VEGAN use vegan choco chips
HOW TO
- Preheat Oven to 350
- Lightly spray cookie trays or line with parchment paper
- Mix all of the ingredients together in a bowl except chocolate chips until creamy and smooth
- Stir in chocolate chips
- Drop by rounded teaspoons about 2 inches apart
- Bake for 9 to 10 minutes
- Let cool 5 minutes before you transfer them to cooling rack
- Hide from family, friends and colleagues… or they will be gone 😎
