I had a craving for these the other day and decided to make them as something to snack on before dinner. My kids love these and they are also great cold too. I bake them instead of frying them. I also cheat and I don’t make my own pastry – I use store bought pie dough. This makes it quick and easy! They make a great appetizer or snack with lunch.
Ingredients:
- ½ cup onion finely chopped
- 2 teaspoons minced fresh ginger
- 2 cloves of crushed garlic
- 1 chile pepper diced
- 1 carrot finely diced
- ½ teaspoon salt
- 1/2 teaspoon turmeric
- 1/8 teaspoon cayenne
- 2 teaspoon curry powder
- 2 large russet potatoes cut into small ½ inch diced cubes and boiled to tender
- ½ cup of frozen peas
- ½ cup chick peas
- 1 tablespoon vegetable oil
- 1 tablespoon chopped fresh cilantro
- 2 teaspoons lemon juice
- Olive oil or butter for sauté pan
- Your favorite homemade or frozen pie crust (rollable)
- 1 egg whisked with 1 tablespoon water
How to:
- Preheat oven to 350
- Coat a sauté pan with olive oil or butter and cook onions and ginger until caramelized (about 5 mins)
- Add garlic, chile pepper , carrot, salt, turmeric, cayenne, curry powder and cook until fragrant (about 45 seconds)
- Add the potatoes and cook while stirring for 1 minute
- Add the green peas and chick peas and cook for another minute (if the mixture is too dry add a small amount of water or vegetable stock)
- Remove from heat and add cilantro and lemon juice
- Set aside until cool
- Roll out pie crust and cut circles (6 inch diameters)
- Place a tablespoon of filling in center of circle and fold circle in half
- Press seams together and place on a cookie sheet
- Brush with egg wash
- Bake in oven until golden brown
I love samosas, and baked ones, loved it!
