This cinnamon prune apple filling is a traditional filling used in Hamantaschen cookies each year. I know you may be thinking PRUNE? Yuck? It will surprise you. It is quite yummy!
Ingredients:
1 cup orange juice 2 Tbsp. honey
1 ½ cup pitted prunes (12 oz.) ¼ tsp. cinnamon
2 tsp. grated orange rind
1 apple, pared and diced
How to:
- Combine orange juice and prunes in saucepan.
- Bring to boiling ; cover and let simmer 10 minutes or until most of the juice is absorbed. Be careful that it does not boil out.
- Pour prunes and juices into blender or processor; add orange rind, honey and cinnamon. Process until smooth.
- Add diced apple and let cool
