I am dreaming of warm weather…. Can you tell? I cant wait for it to be warm enough to cook outside again with out having to put on layers of clothing. In the spring and summer I am pretty much obsessed with making any type of fish taco. The combinations are endless as are the sauces and condiments. This was just simply thrown together using the same avocado chipolte sauce from my mahi mahi tacos which for some reason is the most viewed post on my blog almost daily. For this taco I marinated some shrimp in lime juice, garlic, salt, pepper and olive oil for about a half hour. I then grilled the shrimp. To load the taco, I spread the avocado chopolte sauce on a soft taco, layered on some premade cabbage slaw, tomatoes, cilantro, shrimp and more sauce. Yum…….
